Our Carillion vineyard is situated on the volcanic slopes of Mount Canobolas in the Orange region. Only made in years of exceptional quality, our 'The Volcanics' is the pinnacle of what our Orange vineyard has to offer. A richness and depth on the palate typified by notes of blackberry and cassis married with bold tannins and a floral nose from extended maturation in French oak barrels.
While drinking beautifully now, cellaring will see it continue to evolve and develop for decades to come.

Colour: Deep garnet red
Smell: Intense aromas of blackcurrant and mulberries overlaid with classic cedarwood, sweet vanillin spice and a whiff of fresh raspberry leaf.
Taste: This is trim, taut and terrific Cabernet with a dense core of black fruit flavour’s enmeshed by compact tannins that are firm but in no way harsh. Deserves decanting to reveal its true potential.
Cellaring: Best from 2016 to 2030
Food: Beef Florentine on a bed of rocket leaves.
