This Riesling has lifted varietal lime citrus and fresh fennel aromas. The palate displays a clean acid line with lime and crisp green apple and a savoury fennel texture on the mid palate, giving interest and mouthfill, gained from partial ferment on skins.
A small parcel of grapes was handpicked on 9 March 2016 from a single vineyard on the northern side of Mt Canobolas, situated at 880 metres. The grapes were pressed and fermented in tank with a small parcel fermented on skins. The wine was then reblended to obtain some phenolic textural interest on the palate whilst maintaining a crisp acid driven, aromatic dry-style Riesling. The wine is unfined and unfiltered and so may contain a haze and tartrate crystals. The bottles are hand numbered with only 590 bottles produced.
Drinking well now, and will continue to develop over time.
