Creating the One & Only 1832 Gin was a true adventure. One & Only collaborated with Ian Glen, distiller at the historical Stone Pine Distillery, our Blue Mountains Central Rangers neighbour. Ian takes a minimal-process approach to gin-making that’s in perfect alignment with our own sustainability ethos.
We combed the luscious landscape of Wolgan Valley, choosing the native plants, seeds and flowers that perfectly capture the spirit of the region. The result? A complex craft gin with true provenance that reflects our utmost respect for seasonal and local produce, and natural regional flavours.
AN INIMITABLE BLEND OF BOTANICALS
In truth, our artisan blend has been crafted by Wolgan Valley herself. Distilled with purified water from pristine Carne Creek, which flows through the resort’s curves, 1832 Wolgan Gin is infused with seven native Australian botanicals. Together, they form a flavour profile distinctive to the region. Hand-picked lemon-scented tea tree, coriander seed, finger lime, juniper berry, angelica root, orris root and liquorice root are blended to infuse 1832 Wolgan Gin with a character that instantly evokes bushland wilderness. The name marks the arrival of Wolgan Valley’s early settlers in a nod to her treasured heritage.
