Vignerons Pip and Justin Jarrett have been growing grapes in the cool highlands of Orange for over twenty years. Their philosophy; to create balance and harmony. A balanced ecosystem in the vineyard is reflected in the wines. It is a process requiring vision, patience, perseverance and an unerring work ethic. There is also, of course, the equilibrium of life and a quiet glass of wine after a busy day.
The grapes were harvested in the cool of the night in order to retain their crisp freshness. They were then fermented in stainless steel prior to secondary fermentation.
Colour Very pale straw with a fine, vigorous mousse.
Aroma Fresh and lively aromas of cut Granny Smith apples with, pear, honeydew melon and Kiwifruit.
Palate An invigorating sparkling wine (light in alcohol) with subtle green apple and pear flavours. The fizz is perfect with lemony acidity, good length and dry finish.
